Pellagra is an illness you get when your body does not get enough of one B vitamin — niacin, also called vitamin B3. It makes you very tired, and it hurts the skin and the nerves. Skin that sees the sun can become rough, dark, and sore; people may also have a bad stomach, and in serious cases the mind is affected. It used to appear where poor diets depended too heavily on prepared in a way that left little niacin. You will meet it in history, medicine, and nutrition, not in everyday Taiwan life — it is rare where food is mixed and that vitamin is not missing. The name points at the skin: a Latin word for skin plus a Greek word for a seizure or attack, a “skin-attack.”
糙皮病(缺乏維生素B3/菸鹼酸;中國大陸常稱煙酸)

medicinepathologysciencesA disease characterised by skin lesions and mental confusion, primarily caused by a niacin deficiency.
- In 1755 the French physician Gaspar Casal (1680–1759) published an account of pellagra, then a new disease in Spain.
- Mixing the alkali into the recipe in the right way chemically releases the otherwise unavailable niacin in the corn, which stops pellagra in its tracks, and allowed corn-based agricultural populations to grow and spread.
