A pavlova is a light dessert: a base of baked egg white and sugar () that is crisp outside and soft inside, then piled with whipped cream and fruit — often strawberries, kiwi fruit, or passion fruit. It belongs especially to Australia and New Zealand, and both countries say they invented it. The name comes from Anna Pavlova, a famous Russian ballet dancer (1881–1931); people thought the cake was as light as her dancing. The earliest written use that researchers found is from New Zealand in 1927. In Taiwan you are more likely to meet it in a Western café than at a night market. We usually write it with a small p now, like sandwich — a person's name that became a food word.
