A parfait is a cold sweet, usually in a tall glass, built in layers you can see: ice cream or a light frozen cream, then fruit, sauce, or , then another layer. That layered ice-cream-and-fruit glass is the picture most English menus give you. Though actually, the French word simply means “perfect,” and the older French parfait is a smooth frozen cream, more like a rich mousse, not always striped in a glass. English borrowed the French word as-is, without changing the spelling. In Taiwan cafés you will often meet the tall Japanese-style glass (ice cream, fruit, cereal, cream). It is a food word — shop and recipe language, not a formal word, and not the adjective perfect.
