Parchment is a material people used to write on long before paper was common. It was made from the skin of an animal, like a sheep or goat, cleaned and stretched until it was thin and smooth. Old important documents - like historic laws or diplomas - were written on real parchment. Today, the word is also used for paper made to look old or fancy, usually cream or yellowish, like the kind used for a certificate. And 'parchment paper' in cooking is something else again - a non-stick paper you put in a baking tray so food doesn't stick.
