Ooh is a sound you make with your mouth, not a word you build a sentence around. You say it when something is very pretty, or surprising, or a bit nasty — the feeling sits in how you say it. Drawn out, ooooh, it can mean how lovely or how shocking. With aah, ooh and aah is the sound of a crowd looking at or a baby. Though actually, it can also be teasing, not quite kind: ooh, someone is in trouble. It is spoken English, informal, and you would not put it in a school essay except as a quote. It is close to oh, but ooh is more the feeling in the moment than a way to start a sentence.
