Olfactory means “about smell”: the nose, the nerves, and the part of the body that reads scent. Doctors and scientists say olfactory nerve or olfactory system. In ordinary talk, people just say smell or sense of smell. You can also meet it as a noun in very careful writing, for the sense itself, but the “about smell” use is the one meet most. It is a school-and-lab word, not a kitchen word.
