A nitrate is a kind of chemical stuff that holds nitrogen and oxygen in a certain shape. Farmers put nitrate fertiliser on fields because plants are hungry for it and grow better. Some food, like ham, is kept longer with a nitrate. You will also meet the word in science class and in news about farms. Though actually the same family of chemicals can be dangerous: some nitrates, stored badly, can explode. As a verb, to nitrate is a lab word: to treat something with this kind of chemical, or to turn it into a nitrate. Most only need the noun. The verb belongs to chemistry people, and even they do not use it as much as the noun. It is a school-science and news word, not everyday chat.
