Nepalese means from Nepal or of Nepal. As a noun it means a person from Nepal (one Nepalese, or the Nepalese). You will also see Nepali — that word names the main language, and many people use it for the people too. Older English, and some careful writers, keep Nepalese for the people and Nepali for the language; in real life both get used, and people from Nepal have their own preferences. It is built the same way as Chinese or Japanese: place + -ese. This is not the name of the country. The country is Nepal.
