Munging, in this sense, is an internet trick with email. You change your address a little when you put it on a website — you might write name at example dot com, or add extra letters — so a machine cannot copy it and send you junk mail. A person can still read the real address. It is a niche, slightly old computer-people word; many younger users just say they hide or mask an email. Though actually, to mung is older hacker talk for changing or spoiling data in general; hiding an address is only one use.
