    A meringue is a very light sweet made from egg white and sugar. You beat the clear part of the egg until it stands up in peaks, fold in a lot of sugar, and bake the foam slowly so it dries. It can come out crisp, , or soft, depending on the heat and the time. Cooks pile it on lemon pie, bake little meringue kisses, or make a big with fruit on top. It is home cooking and pastry-shop cooking; the word feels a bit French, which it is. You may also hear it used as a verb, meaning to cover a pudding with that foam and brown it, but the thing itself is the food.

組成Borrowed from French meringue. People used to say it was invented in, and named for, the Swiss village of Meiringen; though actually that is now thought to be a folk story. The French word is instead traced to Middle Dutch meringue, “a light evening meal”, of unclear origin — perhaps Latin merenda (also a light evening meal), perhaps a Dutch verb for dipping bread; scholars do not agree, so the trail stops there.
