Mellors is a man in D. H. Lawrence’s book Lady Chatterley’s Lover. He is a gamekeeper: he looks after the woods and the wild birds that are bred to be hunted. The story is famous because he and Lady Chatterley — his employer’s wife, a woman from a high social class — become lovers. People still say “Lady Chatterley and Mellors” when they mean a love affair that crosses class lines, and when they talk about the old ban on that book. This is a surname used as a character’s name, not a common English word you can put on just any gamekeeper.
