    Mayo is the everyday short name for — that thick, pale, slightly sour sauce you spread on a sandwich or stir into a salad. People say it in kitchens, at barbecues, and on casual menus: “Do you want mayo on that?” It is informal. You would not usually put mayo in a serious recipe title, though cooks say it all the time when they talk. Shop jars often show both words. Though actually, Mayo with a capital M can also be a place in Ireland or a family name; this entry is only the sauce.
