Maraschino is a clear, sweet alcoholic drink made from a kind of sour black cherry, the marasca, grown around the Adriatic. It is a liqueur, not ordinary cherry juice and not quite cherry brandy as people loosely say it: the cherries, and often the crushed stones, are distilled and then sweetened, so you get cherry and a faint almond smell. The name is Italian: marasca plus -ino, a ‘small form’ ending, from an older word tied to amaro, ‘bitter’ — which fits, because those cherries are sharp, not dessert-sweet. Though actually, many English speakers never taste the drink. They meet maraschino on a dessert or cocktail as maraschino cherries: bright red, very sweet preserved cherries. Those were originally kept in this liqueur; cheap ones now may be little more than sugar, colour, and almond flavour. The bottled drink itself is rather old-fashioned and specialist.
