Korma is an Indian dish. Meat — often chicken or lamb — is cooked slowly in a thick sauce. On English menus that sauce is usually mild and creamy, with yoghurt, cream, or ground nuts, and not much . You will also meet vegetable korma. In restaurants in Britain and similar places, chicken korma is the gentle dish people order when they do not want heat. Though actually, in South Asia the same name covers a wider family of slow-cooked dishes, and not every korma is the creamy, slightly sweet one from those menus. In everyday English, though, “korma” almost always signals that mild, rich plate.
