When someone knifes a person, they push a knife into that person's body. People also call the attack itself a knifing — you hear this a lot in the news, especially in British English. It is a hard, ugly word. Doctors, and many everyday speakers, more often say stabbing. You can knife someone in a fight or a robbery; the papers then write about a knifing. Though actually, as a verb it can sound a little like headline language: police reports like it because it is short. It is not a joke, and it is not about cutting food or just holding a knife.
