Kippered describes herring, or sometimes other fish, that has been salted and smoked in that special way — so a kippered herring is the same food people also just call a . You will see it on packets and menus: kippered herring, kippered snacks. It is really the past form of the verb to , used as a describing word: the fish has been kippered. Though actually, in loose talk people sometimes other fish too, but the classic thing is herring.
