Kimchi is a Korean food: cabbage and other vegetables packed with salt, garlic, , and often a little fish sauce, then left until they go sour, hot, and strong. It comes to the table with almost every Korean meal, not only as a side dish but as a taste that runs through soups and too. Though actually, it is not always cabbage, and it is not always fiery — there are milder white kinds — but the red, -hot cabbage kimchi is the one most people mean. In English the word stays kimchi; we did not translate it. It is an ordinary food word now, not a fancy one.

組成Borrowed from Korean 김치 (gimchi). Inside Korea the name is built from older Chinese pieces: 沉 'soaked, submerged' + 菜 'vegetable' — so 'soaked / fermented vegetable'. Japanese has kimuchi, a doublet of the same word.
