Keto is a short way of saying 'ketogenic.' It describes a diet with very little sugar or starch (carbs) and a lot of fat — people go on a 'keto diet' hoping to lose weight or change how their body gets energy. The word is also used loosely to describe foods that fit this diet: 'This bread is keto' means it has almost no carbs.
