A kebab is small pieces of meat, and often vegetables, cooked on a stick over a fire or a grill. You eat them off the stick, or slide them onto a plate. That picture — meat on a skewer — is the tidy meaning, and it comes from a long food tradition in the Middle East and nearby lands. In careful use, people sometimes say shish kebab for that stick. Everyday British English stretches the word: late at night, “Let’s get a kebab” often means meat sliced from a big upright turning spit, put into bread with salad and sauce. That shop food is a cousin of the stick, not the same plate. Both uses are real. The stick is the older, neater sense; the late-night shop is how a lot of British speakers actually talk. It is ordinary food language, a little informal, not a fine-restaurant word. You may also hear it as a verb, to kebab something, meaning to cook it on a stick, but the noun is what meet first.
組成Ultimately from Arabic كَبَاب (kabāb), which reached English partly through Persian, Turkish kebap, Punjabi, and Hindustani (Hindi and Urdu).
