Interstate describes something that goes between, or connects, different states, especially used in the United States. The most common use is for the big highways that connect states across the country — people just call these roads 'interstates,' like 'take Interstate 95 north.' As an adjective, 'interstate' can also describe other things that cross state lines, like 'interstate trade' (business done between different states).
