Iberian is about Spain and Portugal together: the land they sit on, and the people from there. That land sticks out at the west end of Europe with sea around most of it; people call the land Iberia, or the Iberian Peninsula. You can use Iberian as an adjective (Iberian food, Iberian art) or as a noun (an Iberian = a person from there). Though actually, in everyday talk almost nobody says Iberian. They say Spanish or Portuguese. You meet the word in school books, news, and food writing — Iberian ham is a famous expensive ham from Spain, and menus often keep that English word. There is an older history meaning too: long before Spain was Spain, some of the people on that land were called Iberians. That is not the same as pointing at a person in Madrid today. The word feels a bit formal, not — a teacher or newspaper word when one label for both countries is useful. It is not the island ; is only one Spanish island.
