A heist is the act of stealing something very valuable from a shop, a bank, a museum, and so on — jewels, money, art, a truck full of goods. It is not a child taking sweets. It is planned, large, and a little cinematic; news and films love the word (a bank heist, a jewellery heist). It is informal, and you hear it more in American English than in careful British prose, where robbery or raid may step in. Though actually, people use it loosely for any flashy theft in a story, even when the police would call it something else. It is also a verb: to heist something is to steal it in that big, planned way. You would not usually heist a bicycle from the street; that is just stealing.
