Gristle is the tough bit in meat that does not go soft when you chew. It is cartilage — the springy white or clear stuff in joints and in cheap cuts — not bone, and not fat. You may swallow a little, or push it to the side of the plate. Cooks and children complain about it; it is an everyday food word, slightly , not medical Latin. From Middle English gristel, Old English gristel. The older history is unclear. It looks a little like a small form of grist (“grinding”), as if it were “the bit that takes grinding,” but that is only a ; treat it as its own word.
