Goulash is a Hungarian dish of meat (often beef) cooked slowly with onions and a lot of . is dried, ground pepper — sometimes sweet, sometimes hot — and that is the taste people mean, not “chili in everything.” In Hungary, gulyás started as herdsmen’s food, and it can be more like a soup; the thick stew English speakers call goulash is closer to what Hungarians might call a pörkölt.
