An Italian cheese that is white (or creamy) with blue-green marks running through it, and a strong taste and smell. It is a blue cheese: the blue comes from a mould that is safe to eat. The name is the town in northern Italy, near Milan, where the cheese first came from. Some kinds are softer and a little sweet — people start with those if they are new to blue cheese — and others are sharper and smellier. In English it stays a name, so it keeps a capital G. You will see it on pizza, in a sauce, or on a cheese board. If a student only knows 'cheese' as mild and yellow, this one will surprise them: it is meant to be loud.
