Giblets are the little organs you take out of a chicken, duck, turkey, or other bird before you cook the body — usually the heart and the liver, and also the gizzard, the hard stomach that grinds food. In many packets of frozen chicken they sit in a small bag inside the bird. Some people throw them away; some simmer them for gravy or stock, or cook them as a dish of their own. The word is almost always plural. It is a kitchen word, still normal in , a little old-fashioned in some families. Though actually, it is not all the insides: some inner parts are thrown away; giblets are the ones kept for cooking.
