Gaping means opened very wide — so wide it looks as if it could swallow something. A gaping hole in the road is a big, open break; a gaping wound is a cut whose edges stand far apart; a gaping mouth is opened in shock, hunger, or a yawn. It often feels 'too open' or ' open', not a neat little slit. Though actually, this is only gape (to open wide, especially the mouth) with -ing, used like an adjective. People also gape at a celebrity, meaning they stare with their mouth open; but a gaping hole is not staring — the hole itself is what is wide. A gap is just a space; a gaping hole is that space opened hugely, as if it were yawning.
