Galloping, in this use, means increasing or getting worse very fast — so fast it feels a bit out of control. News writers talk of galloping inflation (prices racing up month after month), galloping costs, a galloping infection. The picture is a horse at full run, the gait called a gallop, when the animal is going as fast as it can and is hard to stop. That picture is still sitting inside the word, even when no horse is in the sentence. You will see this sense in newspapers and in medical talk. It can still, of course, simply describe a horse; the “racing-up” meaning is the one borrowed from that run.
組成From gallop (a horse’s fastest run) + -ing. The “getting worse very fast” meaning is a picture taken from that run.
