A Friesian is a dairy cow, usually black and white in big patches, kept for milk. The breed comes from Friesland in the north of the Netherlands (and nearby German land). These cows are famous for giving a lot of milk, which is why you see them in farm pictures and children’s books — the classic black-and-white cow. In British English, Friesian is the usual farm name. In American English the same kind of cow is more often called a Holstein, or Holstein-Friesian. The name is a breed name, so it is often written with a capital F. It has nothing to do with fries (the potatoes) or freeze (ice).
