A fancier is a person who really cares about one kind of animal or plant, often enough to keep them, breed them, or show them. A pigeon fancier keeps pigeons. A rose fancier knows roses deeply. It is an older, slightly specialist word — you meet it with hobbies that have clubs and prizes, not with “I quite like cats.” The feeling is serious interest, not a passing like. Though actually, the same spelling is also the everyday comparative of fancy: “a fancier dress” just means “more fancy.” That is a different use, and in speech you only know which one people mean from the rest of the sentence.
