Edam is a kind of yellow cheese from the Netherlands. The famous one comes as a round ball wrapped in red wax, so in a shop you may spot it before you read the name. The taste is mild, a little salty, and firmer than very soft cheeses. People eat it in sandwiches, with fruit, or in cubes at a party. It is named after Edam, a town in the Netherlands — not after a person. The town name meant something like “the dam on the river Ye,” and that river name itself just meant “river.” It is an ordinary food word, not formal, not slang. Though actually, not all Edam you buy is still made in that town; the name now often labels the style of cheese. It is cousin to other Dutch cheeses such as Gouda, but milder and usually that round red-wax shape.
