A distillery is the place — the buildings, barrels, and machines — where strong alcoholic drinks such as whisky are made. You visit a distillery; you take a distillery tour; smoke and the smell of grain hang around a working distillery. It names the factory, not the drink and not the person. The word sits in the same specialist-but-everyday world as bakery or brewery: ordinary if you are talking about how the drink is made, a little precise if you are not. People stretch it only a little, to mean the whole business on that site (“the distillery closed in the 1980s”). They do not use it for a wine farm or a beer plant.
