Distillation is a way to clean or separate a liquid. You heat the liquid until part of it turns into gas (steam), then you cool that gas so it turns back into liquid again, now separated from what it started with. This is how people make some strong drinks, like whisky, and how they can clean dirty water to make it safe to drink. People also use this word for ideas: if something is 'the distillation of' an idea, it means it is the purest, simplest form of that idea, with everything extra removed.
