In the kitchen, British English uses this for food mixed or coated with a hot, sharp — cayenne, mustard, plenty of pepper — so it bites. Devilled eggs, devilled kidneys, a devilled sauce. The heat is the point; the food is not burnt, and it is not evil. It is a recipe word, a bit old-school British, still on menus. American spelling is often deviled (one l). Though actually, different cooks mean slightly different mixes; the shared idea is “made savoury and hot.”
