Deep-sea fishing or diving is done in the deep part of the sea, far from land — not off a beach, not in a harbour, and not in a lake, however deep the lake may be. The word sits in front of a noun and names a place and a kind of work or life: deep-sea fishing, deep-sea diving, deep-sea creatures. It is a location word, quite practical. Though actually, “far from land” and “far down” both belong in the picture; a boat can be out in deep water, and a can go a long way under it. What the word does not do is describe a feeling. A deep-sea sadness is not English; that would be stretching it.
