A croquette is a small round or sausage-shaped piece of food: crushed meat, fish, potato, or a mix, shaped, covered in , and cooked in oil until the outside is crisp. You bite through the coat into something soft. The French name is about that crunch. Potato croquettes often sit next to a main dish; others are a snack you eat with your hands. It is not always meat, and it is not the lawn game croquet — only the spelling is cousin-close.

組成Borrowed from French croquette, from croquer “to crunch” + -ette (a small one). Named for the crunchy outside. Japanese korokke — the source of Taiwan’s 可樂餅 — is the same word that travelled east.
