    Corking, in this use, is an adjective meaning excellent or splendid: a corking idea, a corking good day. You may also hear it before another adjective, like corking good. It has the same informal, rather old-fashioned British flavour as corker — warm praise, a little dated. Though actually, corking is also the ordinary -ing form of the verb to cork (putting a cork in a bottle). That is not this sense. Here it is a praise word, not a description of closing a bottle.
