Corkage is the extra money a restaurant or hotel charges when you bring your own wine (or other alcohol) and drink it there. They still give you glasses, and they often open the bottle for you; you are paying for that service, and also because you did not buy their wine. Some places drop the fee on certain nights, or if you order food and a bottle from them as well; some charge per bottle. Though actually, the drink does not need a cork — beer or a screw-top wine can still fall under a corkage rule. The name stuck from wine bottles. In Taiwan this fee is very familiar.

You must, if you are the stranger within his gates, imbibe his very bad 18s. sherry at a charge of 36s., or his fifth-rate bottled beer, or pay the ‘corkage’ fee of 1s. 6d. per dozen on everything of your own ordering from which a cork has to be extracted, and probably also forfeit the bottles, charged, in the case of beer, at 2s. per dozen.
