Cookery is the art or skill of cooking — how you make food, not the person and not the stove. It is especially British. People say French cookery, a cookery class, a cookery book. In American English, cooking and are the usual words; cookery can sound old or very British there. Schools used to teach cookery as a subject. Though actually, it still means the skill, not a single meal: you study cookery; you eat dinner. It can also mean the food of a place, in a simple way (Italian cookery), close to what some people call cuisine, but cookery is the plainer word.
