Think of a book you keep in the kitchen rather than on a shelf — pages a little stained, held open with a spoon. Inside, each dish is broken into two parts: what to buy, and what to do in what order. The book is not there to be read through; it is there to be followed while your hands are busy, so someone who has never made the dish can still get it onto the table.
