Cinnamon is a warm brown spice from the inner bark of certain trees, used to give a sweet, woody taste to cakes, oatmeal, tea, and some stews. You buy it as rolled sticks, or as a fine powder. The smell is the thing people remember first. In English it is also a colour: cinnamon hair, a cinnamon coat — a dusty, brown, not quite orange and not quite chocolate. As an adjective it can mean “ with this spice” (cinnamon buns, cinnamon tea) or “of that colour.” It is an ordinary kitchen word, at home in recipes and in talk about clothes or animals (a cinnamon cat). Though actually, a lot of what shops sell as cinnamon is cassia, a related bark that is cheaper and stronger; the milder, thinner kind is often labelled cinnamon. Bakers and spice people care. Most of us just reach for the jar.
