A chocolatier is a person whose job is to make chocolate, or to make sweets and figures out of chocolate. This is a craft word, not a snack word. It does not mean the person behind the supermarket sweet shelf, and it does not mean someone who only loves eating chocolate. A chocolatier learns to melt, mix, and temper chocolate — heating and cooling it so it sets with a snap and a shine — then shapes it into truffles, bars, or tiny animals. The word was borrowed from French, and it still feels a little French and a little fancy. You see it on the window of a small chocolate shop, or in writing about food. In ordinary talk, many people would just say chocolate maker.
