Chitterlings are a pig's intestines cooked and eaten as food. In the southern United States they are a famous old dish, often tied to African American home cooking: cleaned very well, boiled for a long time, sometimes fried after. The smell while they cook is strong; people who grew up with them may love them, and other people may need time. In everyday speech you will often hear chitlins, a shorter, homier form of the same word. This is not a fancy restaurant word in most places, though some cooks now serve them with pride. Taiwanese students already know pig intestine as food, so the idea of eating this part of the pig will not surprise you. Though actually, chitterlings are their own dish, with their own history; they are not exactly the same as Taiwanese 滷大腸, even if the animal part sits in the same family of foods. The word is almost always plural in ordinary talk: chitterlings, not one chitterling.
