A chipolata is a small, thin sausage, usually pork, milder and slimmer than a fat British banger. In Britain they turn up at Christmas, often wrapped in bacon, and at parties as cocktail food. The word came into English from French chipolata, and that came from Italian cipollata, an onion dish, from cipolla, onion. Though actually, today’s chipolata is not an onion sausage. The onion stayed in the name and dropped out of the everyday recipe. It is a food word, a little specialised; many English speakers only know it from Christmas cooking. Do not hear chip and think potato crisps — that is a different chip entirely.
