Chimichurri is a sharp, herby sauce from Argentina, and you will also hear of it in Uruguay. Cooks chop parsley with garlic, oil, vinegar, and , then spoon it onto beef, lamb, or chicken, or brush it on while the meat cooks so the taste goes in. It is not thick like and not creamy like cheese sauce; it is loose and green. In Taiwan you mostly meet it in steak houses that call the food Argentine. Though actually, there is no single official recipe — each grill mixes it a little differently, and some stories about the name are only stories people like to tell.
