    Chablis is a dry white wine from the town of Chablis and the villages around it, in the north of Burgundy, France. It is made from Chardonnay grapes, but it often does not taste like the rich, buttery Chardonnay many people know from elsewhere. A typical Chablis is crisp and quite sharp, more like green apple, lemon, and wet stone than tropical fruit. Because the name is a place, true Chablis has to come from there, in the same spirit as Champagne. Some bottles, especially the better vineyard names, are expensive; a basic Chablis is a nicer-than-everyday white, not always a luxury price. Wine people just say “a Chablis.”
