Ceramics are things made from clay that has been shaped and then baked at a very high heat until it becomes hard — bowls, plates, vases, tiles, and art pieces are often ceramics. As a subject, 'ceramics' is also the name of the art or craft of making these things, like a class you can take at school ('she is taking a ceramics class'). Even though it ends in -s, when you talk about the subject or craft, it is treated as one thing, not many — 'ceramics is fun', but for the actual objects, you would say 'these ceramics are beautiful'.
