A cattleman is someone who owns or looks after cattle — cows, bulls, and steers raised for meat or, less often in this word, for milk — usually on a ranch. The word has a strong American and Australian flavour; you hear it in talk about the West, ranch land, and the cattle business. A cowboy often works the horses and the herd day to day; a cattleman may be the owner or the person who runs the whole place — though actually people mix the two, and some cattlemen still ride and work the animals themselves. The old stories almost always say man; women do this work too, but the set phrase grew up around cattleman.
