Catfishing is the practice of building a fake self on the internet — fake name, fake photos, fake job, fake life — so that people admire you, and especially so that one person will start a relationship with you. The other person thinks they know you; they do not. It is informal internet English, from about the 2010s, and people treat it as cruel once feelings are involved, not as a clever trick. It is not the fish on the plate, and it is not phishing, which is tricking you into giving away passwords and bank details. Though actually the word comes from catfish, the animal name turned into a verb; this -ing form is “the doing of that.”

組成From catfish + -ing. The internet verb catfish (“to lie about who you are online”) is the base; this is the -ing form, used for the practice. Why English picked the fish for this, I will not pretend to pin down.
