A strong substance in the body that can bend a little. It covers the ends of bones in a joint so they slide smoothly instead of grinding. You can feel it in your outer ear and at the tip of your nose — those parts keep their shape, but they are not bone. Doctors and sports reports use the word a lot: a “cartilage injury” often means the knee. Everyday older English also had for this kind of stuff, especially the bits you notice in meat; cartilage is the body-science word you will meet in class and at the clinic.

組成Borrowed from French cartilage, from Latin cartilāgō. English already had gristle for the same kind of stuff; cartilage partly took its place in medical talk.
